How to Prepare Delicious Githeri

Githeri is a delicious meal that originates from the Mt. Kenya region in Kenya.

Traditionally, it was prepared by the use of the maize and beans boiled together in a traditional pot. The maize and beans could be green or dried.

Today, there are people who still cook it in the traditional way. But the majority of the people in the cities or abroad, tend to prepare this meal with the canned beans and corn.

This is because it is easy and fast to prepare it this way.

✦ The Ingredients

  • 1 onion
  • 2 chopped tomatoes
  • 4 tablespoons of cooking butter
  • 400g can of red kidney beans
  • 150g can of sweet corn
  • Fresh grated 3 cloves garlic
  • 1/2 teaspoon of curry powder
  • 1/4 teaspoon of salt
  • 1/4 cup of chopped fresh coriander leaves

✦ The Steps of Making Githeri

1 ✦ Chop the onion into small pieces.

2 ✦ Add the 4 tablespoons of cooking butter in a pan and heat in medium heat.

3 ✦ Then add the pieces of onions and cook them until they are golden in colour.

4 ✦ Add the fresh grated 3 cloves garlic. Stir the mixture and cook them for 2-3 minutes.

5 ✦ Add the 2 chopped tomatoes. Cook them until they are soft at medium heat.

6 ✦ Then add the 1/2 teaspoon of curry powder. Stir it and cook it for 3 minutes.

7 ✦ Meanwhile, drain the water from the 400g can of red kidney beans and the 150g can of sweet corn.

8 ✦ Then add drained off 400g can of red kidney beans and 150g can of sweet corn.

9 ✦ Mix it well and then add some salt to taste. And cook at medium heat for 8 minutes.

10 ✦ Then add the 1/4 cup of chopped fresh coriander leaves and 1/4 cup of water. Stir well and cook for 7 minutes.

11 ✦ The Githeri is ready to be served.
