Cooking Mukimo using peas is just one of the different ways of preparing this delicious recipe. When it is ready, it is served with a chicken or beef stew. One of the advantages of cooking mukimo with peas is that it is not time-consuming.

✦ The Ingredients of Cooking Mukimo with Peas

  • 450g of potatoes
  • 250g can of sweet corn
  • 350g of fresh peas
  • 1 red Onion
  • 3 cups of water
  • 3 tablespoons of cooking butter
  • 1/8 teaspoon of salt
  • 1/4 cup of full milk

✦ Steps of Cooking Mukimo With Peas

1. Wash the 350g of fresh peas, and put them in a cooking pot

2. Add 2 cups of water and 1 teaspoon of sugar

3. Then boil them for 15 minutes at medium heat.

4. Meanwhile, peel the 450g of potatoes and cut them into big pieces.

5. Clean them up, put them in a cooking pot, then add the 3 cups of water and a pinch of salt. And then boil them until they are ready.

6. Open the can of 250g of sweet corn and drain the water.

7. Peel the red onion and cut it into small pieces.

8. Add the sliced pieces of onions to a frying pan and add 3 tablespoons of cooking butter.

9. Cook the onions on medium heat. Cook them until they turn light brown. Then add the 250g of sweet corn.

10. Cook the sweet corn only for 3 to 4 minutes at medium heat and then reduce the heat to the lowest level.

11. At this moment, potatoes and the peas should be ready. Drain the water from the bottom of them and add the cooked peas to the potatoes.

13. Reduce the heat, and mash them together properly.

14. Add the 1/4 of full milk. And mix.

16. When still mixing, add the warm sweet corn and the onions you had prepared. And your food should be ready!

✦ Some Tips

1. You can also use frozen peas.

2. If you can get fresh corn, the better because your mukimo will be tastier and healthier. In this case, boil the corn separately for 10 minutes before you start to cook your mukimo.
