Githeri is a recipe that has its origin in the central region of Kenya. And this delicious meal with time has become one of the renowned signature meals for Kenya.
Traditionally, it was prepared by the use of maize and beans boiled together in a traditional pot. The maize and beans could have been green or dried.
Today, there are people who still cook it in the traditional way. But the majority of the people in the cities or abroad, tend to prepare this meal with canned beans and corn. This is because it is easy and fast to prepare it this way.

✦ The Ingredients
- 1 red onion
- 4 tablespoons of cooking butter
- 400g can of red kidney beans
- 150g can of sweet corn
- Freshly grated 3 cloves garlic
- 1/2 teaspoon of curry powder
- 1/4 teaspoon of salt
- 1/4 teaspoon oregano powder
- 1/4 teaspoon parsley powder
- 1/4 cup of chopped fresh coriander leaves
✦ The Steps of the Githeri Recipe
1 ✦ Chop the red onion into small pieces.
2 ✦ Add the 4 tablespoons of cooking butter to a pan and heat it on medium heat.
3 ✦ Then add the pieces of onions and cook them for 2 to 3 minutes.
4 ✦ Add the freshly grated 3 cloves garlic. Stir the mixture and cook them until they are golden in color.
5 ✦ Meanwhile, drain the water from the 400g can of red kidney beans and the 150g can of sweet corn.
6 ✦ Then add them to the mixture of the cooked onions and garlic and stir them well.
7 ✦ Next, add the 1/2 teaspoon of curry powder. Stir it and cook it for 3 minutes
8✦ Mix it well and then add some salt to taste, the 1/4 teaspoon oregano powder, and the 1/4 teaspoon parsley powder. Then stir well and then cook it at medium heat for 8 minutes.
9✦ Then add the 1/4 cup of chopped fresh coriander leaves mix it well and then lower the heat and cook for 7 minutes.
