Cooking Mukimo with spinach is one of the different ways to use leafy green vegetables. This is a recipe that is originally from the Kikuyu community in Kenya.

In this post, it is by use of frozen spinach which can be fresh or frozen.

✦ The Ingredients

  • 400g can of red kidney beans
  • 250g can of sweet corn
  • 500g of potatoes
  • 250 g creamed frozen spinach
  • 1 onion
  • 3.5 cups of water
  • 4 tablespoons of cooking butter
  • 1/8 teaspoon of salt
  • 2 tablespoons mayonnaise

✦ The Steps of Making Mukimo With Spinach

1 ✦ Peel the 500g of potatoes and chop them into big pieces.

2 ✦ Wash them and then put them in a cooking pot.

3 ✦ Add the 3.5 cups of water to the potatoes and the 1/8 teaspoon of salt. Then boil them until they are cooked.

4 ✦ Open both of the 400g cans of red kidney beans and the 250g can of sweet corn and drain all the water

5 ✦ Peel the onion and slice it into small pieces.

6✦ Put the sliced onion in a frying pan, then add the 4 tablespoons of cooking butter and cook them on medium heat. Keep turning them until they are brown in color.

7 ✦ Then add the 400g of red kidney beans and the 250g of sweet corn.

8✦ Cook them at medium heat for 10 Minutes.

9✦ Then, steam the 150g creamed spinach at medium heat for 5 minutes. And then drain the water from them.

10 ✦ The potatoes should be ready by now. Also, drain the water from them.

11 ✦ Reduced the heat and mash them.

12 ✦ Add the 2 tablespoons of mayonnaise and then mix it well.

13 ✦ Then add the mixture of the onions, 400g of red kidney beans, and 250g of sweet corn to the mashed potatoes.

14 ✦ Also add the steamed creamed spinach and mix them all together. And the Mukimo is ready!

✦ How is Mukimo Served

Mukimo is normally served with chicken or beef stew or minced meat or even nyama choma and a salad.

✦ Some Tips For Mukimo with Spinach

  • You can use fresh spinach too. But in this case, you will have to add them to the boiling potatoes. This is after the potatoes have been boiling for around 10 minutes.
  • If you can cook mukimo with fresh corn, fresh red beans, and fresh spinach, the better. Just remember to boil the red beans and the corn together beforehand.
