How to Make Mukimo With Spinach

Mukimo is a meal that is originally from the Kikuyu community in Kenya. This is the community that is from the central region of this country.

✦ The Ingredients

  • 400g can of red kidney beans
  • 250g can of sweet corn
  • 500g of potatoes
  • 250 g creamed frozen spinach
  • 1 onion
  • 3.5 cups of water
  • 4 tablespoons of cooking butter
  • 1/4 teaspoon of salt
  • 2 tablespoons mayonnaise

✦ The Steps of Making Mukimo With Spinach

1 ✦ Peel the 500g of potatoes and chop them into big pieces.

2 ✦ Wash them. And then put them in a cooking pot.

3 ✦ Add the 3.5 cups of water to the potatoes and the 1/4 teaspoon of salt. Then start boiling them till they are cooked.

4 ✦ Open the 400g can of red kidney beans and drain all the water

5 ✦ Open the 250g can of sweet corn and drain all the water.

6 ✦ Peel the onion and slice it into small pieces.

7 ✦ Put the sliced onion in a frying pan and add the 4 tablespoons of cooking butter.

8 ✦ Cook the pieces of onion in medium heat. And keep turning them until they are brown in color.

9 ✦ Then add the 400g red kidney beans and the 250g of sweet corn.

10 ✦ Cook them at a medium heat for 10 Minutes.

11 ✦ Meanwhile, defrost the 150g creamed frozen spinach.

12 ✦ Then steam the 150g creamed spinach at medium heat for 5 minutes. And then drain the water from them.

13 ✦ Then drain the water from the boiled potatoes.

14 ✦ Reduced the heat and mash them well.

15 ✦ Add the 2 tablespoons mayonnaise and then mix it well.

16 ✦ Then add the mixture of the 400g red kidney beans and the 250g of sweet corn.

17 ✦ Then add the steamed creamed spinach and mix it well.

18 ✦ The Mukimo is ready!

✦ How is Mukimo Served

Mukimo is normally served with the chicken or beef stew or minced meat or even nyama choma and a salad.

  • After defrosting the 150g of the creamed frozen spinach, and you find that the pieces are not in small pieces, then you can blend them
